That is not the normal result. Normally an insurance company won't do that because the cost of the lawyers is more than the claim is worth. There may have been peculiar facts in your coworkers case.

We used the Progressive Insurance Snapshot discount--my wife's discount was 25%

I'm not sure that the math behind opting for UIM in lieu of collision is good either.
