...and she said you could have the recipe:
Cauliflower, Cheese and Egg Casserole
Total time: 50 minutes
Ingredients:
2 cups cauliflower florets
2 eggs
1/2 cup Greek yogurt
1/4 cup milk
1/4 cup shredded Gruyère cheese
pinch of nutmeg
1 tsp Herbes de Provence
1/4 cup grated Parmesan
pinch of nutmeg
1 tsp olive oil
Instructions:
Cook cauliflower in boiling, salted water for 8 minutes.
Drain and allow to cool slightly.
In medium bowl beat eggs well.
Add yogurt, milk, Parmesan, Herbes and nutmeg. Mix well.
Arrange cauliflower in a lightly oiled baking dish.
Pour egg mixture over the top and sprinkle with cheese
Bake at 400F (200C) for 30 minutes or until set.
