I cook but my wife bakes. We hang out with mostly Baker people all flours are not the same. This has been drilled in.

absolutely! Soft wheat flour is best for biscuits and soft fluffy dinner rolls

Assuming you are buying the same general type (i.e. unbleached white) the primary difference...
