That's hard. My favorties are pecans, walnuts, cashews and all the others less frequently

Cashew because it makes great vegan cheeses and lots of good vegan ice cream is cashew based

The healthiest nut is the black walnut, loaded with EPA, but I have to pick cashews.

Guess it's a loose definition of nuts that your GI doesn't like cause Cashews are legumes

Chestnuts are pretty good, ate them a lot in Hong Kong when I lived there as a kid
