The key to a great vegan brown gravy is to make a strong stock by mixing Vegemite or Marmite into warm water. Then you can thicken it any way that appeals to you. The sauce will have a very rich, almost meaty flavor. I especially liked it with seitan-veggie stir fries, those even fooled meat eaters.

I'm still not fond of the stuff on toast, but it's a great way to give sauces, stir fries, and things like plain tofu a flavor kick.
