3. I do a mini version of this for one person

I use my counter top Breville oven with a 1/4 sheet pan.

One chicken breast
one or two small potatoes
whatever veggies on hand

Toss it all with olive oil and whatever seasoning. Right now, I'm on a Greek Freak spice blend kick.

Cooks in 20-30 min.

I do have some za'atar in the cupboard. I'll try that next. Thanks.
