Even the "lazy cheater" version I make is good.
I use 9" frozen pie crusts that I thaw then cut and shape into those little 5" aluminum pie pans (remember to use a light non-stick spray). I then pre-bake the crust (make sure to poke the bottom of the crust with a fork or the bottom will form a bubble).
For the filler, the basic ingredients are chopped cooked chicken, cream of chicken soup, and frozen mixed vegetables (no need to thaw). You can add chopped celery, onions, mushrooms..... you name it. Herbs and seasonings to taste.
No top crust needed. IMHO.
Put on the plastic covers and freeze these after filling and pull them out as needed.

I pre boiled bite sized pieces, then baked with an orange juice/olive oil mixture.

There's no rice in it - that's what the recipe called it though and I haven't made it in a long time
