21. Three Sisters Soup for the Vegans out there

To begin, make Butternut Squash Soup in the Instant pot. I use any squash, carrots and/or sweet potatoes that I have on hand. I don't peel the squash because I scrub the veggies and after they pressure cook 20 minutes the peel is very tender and adds fiber and flavor to the soup. Besides, peeling is a pain.
Put 1 large butternut squash, 2 carrots, and 1 yam, and 2 cups of vegetable broth in the Instant Pot.
Pressure cook it for 20 minutes.
Allow pressure to release naturally.
Put squash, and broth in blender and blend till smooth. Return to Instant Pot

Then Add:
1 can of cut corn, (drain if you don't need to thin the soup )
1 can rinsed black beans (or bean of your choice)
1 can diced tomatoes (drain if you don't need to thin soup)
1 clove minced garlic
1/2 tsp sage
salt & pepper to taste

Return to Instant Pot and use the saute feature to bring soup back to boil.
Turn setting to low to keep it warm till serving.

Serve with roasted pumpkin seeds on top
