1. I think if the water is not circulated constantly there

will be a temperature gradient as the temp from the point of contact with what you are cooking will be and stay a cooler temp than the water closer to the heating element in the insta pot without circulation.
I don't have one yet but am getting one in the near future. A relative got one for christmas and didn't know what it was and I think I may take it off his hands in the future. He is not really into cooking that much if fear.
