I had tried to go more vegetarian in the past, but then I'd end up with low protein levels during testing before and after surgeries so I gave it up. I know that it really doesn't take all that much meat protein to achieve a good protein level with a balanced diet, so that is what I do most of the time, by making dishes with only a little meat or cheese.

At the same time, I am trying to cut carbs, so I can't stretch with pasta, rice and potatoes very often. Usually, I just put a lot of vegetables in. My husband buys pasta and rice and since I hate wasting food, I try to work them in sometimes, but pasta is what I waste the most.
