10. When I eat them by themselves I usually roast them first

For whatever reason I've never pickled them. Whenever I have a surplus of peppers I just hang them to dry or I roast and freeze them.

When I make picante I lightly saute them with some onion and garlic, then process them with canned San Marzano tomatoes, cilantro, and some seasonings.
