5. Yep. I made the stock with beef bones, carrots, celery, onion, garlic, bay leaf and fresh thyme.
Then I strained all the spent veggies out and added in new carrots, celery, onion and garlic plus tomatoes, potatoes, mushrooms, and beef seared in red wine. I made a little cheesecloth bag with the beef bones, more fresh thyme, fresh rosemary, and peppercorns which I'll fish out later. Tonight I'll add some fresh green beans and kale to keep them from being overcooked. I have a fresh whole wheat baguette to go with the stew. I can't wait. It's so cold and miserable here, it'll be the perfect thing.
