42. for people who have so much pork in hte menu
they cant work it over a fire worth crappo
my ribs were cold and the caul wasnt removed and the pulled pork was sorry
it amazed me because i saw a lot of other foods (more native i guess) that was exceptional
it was like someone had been to the US
had some BBQ and decided to do it back home and then a copy of that copy etc etc devolving down to a standard of terrible BBQ
i wish i had more time to work on it while i was there because the local favorite ingredients along with a touch or 2 from nearby islands could make an awesome BBQ style all its own
the main point they missed was that steaming the pork pre fire is essential
