Reply #18: I had poor luck with breadcrumbs, so now I bread mine in a mixture of:

1/2 cup flour
1/2 cup corn meal
3 tbs fine-grated parmesan
1 tbs fine-ground thyme
1 tsp salt

I cut fairly thick slices and fry them in
basil-infused canola oil (about 3 minutes per side)
while I prepare the sauce in a separate pan, and combine
everything on the plate.
