here's the exact recipe she gave me,

1 8 oz. can drained crushed pineapple, reserve juice
1 sm. pkg. orange Jello
4 oz. Philadelphia cream cheese at room temperature
1/2 pint heavy cream, whipped
1/2 c. grated carrots (optional)

Reserve pineapple juice and add water to measure 1 cup. Heat juice mix and add to dissolve orange Jello, and add cream cheese to hot Jello until all the cheese is melted. Fold in whipped cream to cheese/jello mixture then fold in pineapple and grated carrots. Mold and garnish with mandarin oranges. Chill for 3 to 4 hours before serving.
