Sunday Afternoon Recipe:

To take off the autumn chill :evilgrin:

Pumpkin Vegetable Stew:

4 cups cubed peeled pumpkin or winter squash
1 can (14 1/2 ounces) diced tomatoes, undrained
2 cups frest cut green beans
1 cup fresh or frozen corn
1/2 cup sliced onion
1/2 cup chopped green pepper
1/2 cup chicken broth
1 garlic clove, minced
1/2 teaspoon chili powder
1/4 teaspoon pepper

***In a large saucepan, combine all the ingredients. Bring to a boil. Reduce heat, cover and simmer for 40-45 minutes or until the vegetables are tender
Yield: 6 servings
