I make:
Deep fried beets for salads
beet juice
cooked beets
pickled beets
borscht
and would make anything else you could make with a beet

15. There are several ways to do them
you can:
Use a mandolin and slice them very thin..about 1/8 inch or julienne them ( same width) and then fry them in a deep fryer or pan with about 1 inch of hot cooking oil...then remove with a strainer after about 1 t0 1-1/2 minutes and drain on paper towel

OR

you can shred them with the large grater attachment and fry them in 1 inch of hot cooking oil for about 40 seconds in which case you can sprinkle them on a salad like bacon bits

Once fried and crispy they are ten times sweeter..
you do have to watch not to OVERFRY them as they are sugar and burn easily

I haven't had them in ages, either. You pretty much have to have a garden to be able to get them.

19. I actually juice and drink beet juice
Well, haven't recently because my juicer is broken and needs replaced but I drink a Carrot/Beet/Apple juice a couple of times a week. The beet juice is good for cleaning out ones liver!
