And we listened to Hawaiian music during dinner. Kind of a multicultural meal.

8. What kind of pot do you use?
I recently bought a rice cooker after thinking for years they were for idiots. But man, what it can do with beans and rice!

15. I made the red beans in a crock pot
but the rice I made on the stove top with some cloves and almonds. Came out pretty good.

TheProphetess loves the rice cooker too but I needed something a bit bigger than it makes.

23. OK, here ya go!
Edited on Tue Feb-28-06 10:23 PM by EstimatedProphet
1 lb red beans
3 cups chicken stock
1 stalk celery
1/2 green pepper
1 small onion
2 pureed tomatoes
8 cloves garlic
1 tsp paprika
2 tsp Cajun Chef shake (Tony Chachere's or Paul Prudhomme's)
1/2 tsp salt
1/2 tsp pepper
1/2 tsp ground anaheim chile
1/2 tsp ground chipotle chile
2 tsp butter
1/2 cup flour

Soak beans overnight, drain. Place beans, celery, green pepper, onion, and tomatoes in pot, add chicken stock. Crush garlic, add. Add spices. Bring to low boil, then simmer for 1 hour. While simmering, drain off 1 cup liquid. Add butter and let melt. Add small amounts of flour and mix in-continue mixing in flour until a semithick paste. Add back to beans; mix in as a thickener. Serve over rice.

This is a vegetarian recipe, but some more oomph can easily be added by putting in a ham hock before the beans boil. I also sometimes like to throw in come cubed ham and some ground beef too.

Miz t. and I split. 1/2 half of each.
We're on a 1500 cal/day diet which is really working.
Don't feel deprived at all.
Eating "right" and just less.
I've dropped 17 lbs. in about 6 weeks.
Size 42 to 40 pants.

I lose weight pretty easily when I reduce portions, too. But I lose momentum at the least bit of distraction..good and bad.

We were supposed to have 'em last night, but we had a kerfluffle with lettuce (that we had none.) So we had 'em tonight.

Marinating 24 hours was a good idea.

34. Just a couple of tapas.
Dates wrapped in jamon serrano. I don't know whether they were fried or baked or what. Baked, probably, though one would naturally think fried, given the frying ways of the world.

And these prawns in this crazy chili sauce. And bread to soak up the pot liquor.

Red wine and sherry.

Jesus wept.
