I am making dinner - what should I make
The follow ingredients should be used:

1 whole chicken
red and yellow sweet peppers

I initially had a hankering for chicken marsala, but usually that is made with chicken breasts. I think I am going to roast the peppers, remove the burned skin, bag them and cook with oil, garlic and capers.

Should I just roast the bird, or cut it up and cook otherwise? Thoughts?

I'd go with that. Stuff some garlic and maybe a lime inside with salt and pepper, oil the outside then salt and pepper it, and that's all you need really. Yum. I usually start the oven high for like 15 minutes, like at 500, then lower it to 375 'til it's done, browner skin that way.

Enjoy the meal!

Now I got a jones for roast chicken. :(

i would say do the following:

boil the chicken with carrots, celery, and onion.

take the chicken out when cooked (save the remaining liquid for soup, you can freeze it.

take a can or two of stewed tomatoes, garlic, cumin, and some crushed rosmary, mix this with the meat of the chicken pulled from the bones (at this point you could take the fat, skin, and bones, take your previous broth mixture, add more water and the bones, skin, and fat and create a stock - let simmer for about 8 hours, adding water when necessary, then freeze this mixture after skimming scum and removing solid pieces)

cook the chicken, tomatoes, roast the peppers on a gas stove and then throw them in there.

if you have rice, do this: get some vegetable oil and simmer the rice until it starts smelling slightly burnt, add some of the stock you have cooking and water, add a can of stewed tomatoes, cumin, and garlic. a bag of peas and carrots would be nice.

if you have tortillas, warm them up in microwave or on gas stove when rice is done. keep them warm by wrapping them in a dish towel.

E-Z salsa recipe:

again, can of stewed tomatoes, garlic, serrano peppers (whole), onion, cilantro. mix it all up in a blender.

you will have an excellent meal after all this.
