6. Does seem a tad overproduced
Tilapia is actually quite tasty, but what's "Vera Cruz"? All too often, fancy names like that are just a way to sneak cheese or mustard or something else icky past me without my knowing about it first.

7. Veracruz is a very specific type of cuisine
It's a Mexican state on the gulf; they tend to use a certain set of ingredients and styles that match with the flora and fauna native to the region. This would include lots of seafood prepared with tropical fruits and local herbs -- particularly in this case.

Here, I'm guessing this means something like "the tilapia will be served with a salsa made of papaya, peppers and cilantro."

A friend of mine is a waiter there and emailed
me the menu, with a comment to the effect of
"Can you believe they pay for this stuff?"

He, like me, has plainer tastes. But I see
that not everyone on the poll agrees.

12. Roulade....mmmm
Try this

Take a seared, thin cut of beef, preferably sirloin. Spread mustard on it. A spicy mustard. Now get a pickle spear, a polish or kosher is nice. Roll the beef around the pickle spear. Bake until done. Roulade!

Roulade is just a fancy French word for meat rolled up around something.

But any fish can be cooked in the medley of New World tomatoes and pickled chiles with Old World Onion, garlic, pimentos, stuffed green olives, and an assortment of herbs, sautéed-Mediterranean style, in fragrant olive oil.

Asiago, chipotle and asparagus with beef sounds like an interesting combination, actually...(the beef is savoury, asparagus is somewhat bitter, chipotle is slightly hot-spicy and just a little sweet, and Asiago is just a touch salty/sour, so they should play off one another fairly well).

There's a restaurant around the corner from me called "Smart Noshery Makes You Slobber". They have a dish called "Fuck the Hot Fish". And I'm pretty sure it's tilapia.

At an annual feast of traditional Icelandic fare. Examples:

Hákarl or Greenlandic Shark is a food from Iceland. The shark itself is poisonous when fresh due to a high content of uric acid, but may be consumed after being processed (see below). It has a particular ammonia smell, not too dissimilar from many cleaning products. It is often served in cubes on toothpicks. Those new to it will usually gag involuntarily on the first attempt to eat it; it is usually best to block one's nose so as little of the ammonia as possible reaches one's nasal cavity. It is usually accompanied by a shot of the local fire water, Brennivin.

Þorramatur (food of the þorri) is the Icelandic national food. Nowadays þorramatur is mostly eaten during the ancient Nordic month of þorri, in January and February, as a tribute to old culture. Þorramatur consists of many different types of food, such as sour ram testicles, rotten shark, burned sheep heads, sheep head jam, blood pudding and dried fish (often cod, haddock or seawolf), served with butter.

Chef Anthony Bourdain, who has travelled extensively throughout the world sampling local cuisine for his Travel Channel show No Reservations, has described shark þorramatur as "the single worst, most disgusting and terrible tasting thing" he has ever eaten.

I've seen Mr Bourdain happily chowing down on things I'd run from, screaming. So I'll cross Icelandic Cuisine off my "Must Try" list. (However, his visit to Iceland made for an amusing episode.)

The menu in the OP sounds a bit overwrought, but I'd gladly partake. Especially if someone else were paying; it looks expensive.
