Bet their business is down. Heh. They may want to consider a name change. I wouldn't buy anything with a name like that.

1. I eat "Mike's Super Bowl (of) Chili"!!

MIKE'S SUPERBOWL (of) CHILI
3 lb. lean ground beef (or other meat)
3 10 oz. pkg. frozen chopped onions
3 12 oz. pkg. frozen chopped green peppers
3 15 oz. cans of red kidney beans (drained)
3 8 oz. cans of tomato sauce
3 16 oz. cans of tomatoes (drained)
1 tbs. sugar
1 tbs. salt
5 tbs. chili powder
1 tbs. cayenne pepper
1/2 tsp. curry powder
4 bay leaves
other spices as desired(!)
1 cup red wine

(All measurements are very approximate.)

In large covered frying pan, brown ground beef, drain fuids.
Add chopped onions and chopped green peppers.
Cook covered over low heat until green peppers and onions are thawed and hot.
Drain all fluids.

In large pot (8 qt. min.), mix kidney beans, tomato sauce, tomatoes, and spices.
Cook until tomato chunks begin to break down.
Add beef, green peppers, and onions from frying pan.
Add red wine.

Cook until tomatoes are broken down.


Serve (next day, after reheating) with corn bread muffins and butter.

5. I made a batch (about 5-6 qts) yesterday. Ate some today - a big bowl, with cornbread.

YUM!!

This is a recipe (the variations I use are secret) I've "perfected" over the last 30 years. When I've used buffalo meat, it's been stupendous! It's NOT a chili for idiots who want to show how tough they are (and how their taste buds are dead). I firmly believe a chili should be spicy, but not to the point of masking the taste. The curry powder is (imho) essential - it brings out the flavors. It should NOT be detectable - nobody should be able to say they taste curry. The sugar is essential in any tomato-based recipe like this - reduces acid indigestion and flatulence, despite the beans and green peppers. Draining the kidney beans, tomatoes, and browned meat mix is essential - and the red wine is what adds fluid to the final mix (I usually use Merlot or Chianti).

I'm NOT a "cook" ... and grilling a steak is typically my limit. However, this particular dish is my pride and joy. No matter who I've had over on Superbowl weekend over the years, they've LOVED my chili - even the macho Tex-Mex jalapeno lovers.

It's a recipe I've developed, based on my ex-wife's recipe (she got from her mother) and my own mother's recipe ... and then adapted over the years. It's not one of those "pretentious" chop-your-own-onions recipes - I believe in convenience where the differences are psychological, at best.

I must say, though, that I get heavy on some things and light on others ... and use other spices, as well. This recipe IS the basic recipe. Have fun!

One variation I'm aching to try is venison and buffalo meat combined. I loved it when I used buffalo meat.

Got stuck buying Bush's beans down south - Yuk - Talk about tasteless.

B&M has them beat by a mile.

8. They make good vegetarian baked beans. Everybody else thinks baked beans MUST
have chunks of dead pig in 'em. I buy their veggie baked beans all the time. If not for Bush's, I'd have to bake 'em myself.

Been around a long time. Still comes in a glass jar. If your store doesn't carry them, ask for it.

I sure think it's good ... and all my friends for the last 25-30 years do, too. Even after I brag about it and they've resisted saying so, they've gone 'yum!' and get seconds and thirds.

I keep working on it every year to get it better ... mostly, now, by spices. Sometimes I make it a bit more "tomatoey" with an extra half-can of (whole) tomatoes. Sometimes I use fresh tomatoes, but it doesn't make a noticeable difference. Some spices I don't mention (and don't use every time) are sage (just a tad), basil (a couple tbs.), ground cumin (a little goes a long way), rosemary (adds a hint of 'fresh'). Ground buffalo meat REALLY goes good in this recipe. I'm dying to try a venison/buffalo mix. Maybe next year.

Actually, I did one time. It was OK ... but just slight "off base" for the medley of flavors in there. Perhaps a better word is "eclectic."

Like I say, I'm not a "cook" by any stretch of the imagination. The beauty (imho) of chili is the time it takes to prepare it allows me to 'experiment' ... taking a sample and adding a smidgen for taste testing. That's how I've gotten the curry and 'secret' spices. I have to include the curry in the recipe because it really is a 'magical' spice ... in small amounts. I was really pleasantly surprised the first time I tried it.

their baked beans are pretty good. If it were my business though, I must admit I would have to issue some sort of disclaimer. Just bad luck on a name I guess. It happens. By way of example, Hitler conceived the Volkswagen, though of course for all I know the "bean Bushes" have no connection with Shrub.

17. Not me... I make my OWN red beans and rice from scratch then add
hot and spicy andouille sausage (preferably alligator), and cayenne pepper, etc... I think I'll go eat some right now. :9
