I cooked soooo much food over the weekend

I cooked soooo much food over the weekend
I won't have to "cook" all week.

I made a homemade spaghetti sauce and then I took a page out of the Top Chef book and made homemade "Bertolli" with it. I froze the sauce in ice cube trays, froze the pasta separately, and even made some small meatballs and froze them separately and then packed it all up in freezer bags.

Did the same thing with a chicken, pasta, spinach and mushroom dish... this time it was a pink sauce.

I made sausage soup and froze half of it

I made fish chowder. (I think I'll have that for supper tonight.)

There's still spaghetti sauce that I can use to make a pizza tonight.



You know, I really love it when weeknight evening meal prep is effortless.

1. I wish I knew how to cook
I can whip up and omelet or bake some frozen pizza rolls, but I really don't know how to cook- especially healthily. Another thing that makes cooking kind of hard is my schedule. I work 10 hours on third shift and I don't get a break. I'd need to pack something that doesn't need heated up and the only thing I can think of is ham sandwiches and chips.

3. I made it w/ haddock
the good stuff...

red-skinned potatoes

and I used lots of rendered salt pork to cook the onions.
