Alton Brown went into all the wonky reasons the recipes are different, but this is what you need to know: the recipe for chocolate chip cookies is slightly different depending on whether you want thin & crispy, cake-y, or chewy. **The chewy recipe is like the Holy Grail of chocolate chip cookie recipes. Follow it to the letter (esp. RE using bread flour and MELTED butter), and you'll have the best cookies EVER.
