Atlantic Salmon, Cherry and Apple Wood
My deck stinks but the outcome will be so delicious.

5 pounds of Salmon smoking for Holiday gifts or for me and Mrs. NewHampster to eat in one seating.

Its been in one hour so far. This is an electric Outer's and I usually go for 3 - 4 hours.

Brine was OJ, Salt and Brown Sugar for 24 hours.

Anyone want a taste?

1. how'd you smoke it?
i'd love to try some decent smoked salmon. I've only had the "cheap" stuff and it tastes awful.

have you ever tried to pickle fish? just curious....

Gravlox is very easy to make and tastes almost like the expensive Salmon in a NY deli.

I us a cheap electric smoker that I've had for years. I wait for Salmon to drop to $6/lb. then do a batch.

You brine it overnight in Salt water or my favorite, Orange Juice, Brown Sugar and Salt.

Dry the fillets with paper towel

Smoke in Cherry, Apple and maybe alder for a few hours.

Do not ever use that Hickory crap unless you want the fish to taste like beef jerky

4. I remember as a kid
My Grandfather used to talk about smoking fish. I thought he meant smoking it like you smoke tobacco.LOL
