I thought of you last night as I made homemade sauce for my spaghetti. I need a good (and easy) recipe. Mine wasn't 'tomatoy' enough (and it was a little sweet). Can you help me??

about 20 Roma tomatoes (seeds taken out)
4 large plum? tomatoes (seeds taken out)
1 large red onion
1 large clove of garlic
1 16oz can of beef broth

All that pureed and put in stew pot to boil and cook down (about 1 1/2 hours)

1/2 pound ground chuck
1/2 pound ground Italian sausage

browned together and drained and then added to sauce

Then I added some Sweet Basil (about two teaspoons) and 1/2 tsp of salt

It was good sauce, but just didn't have that deep tomato taste and like I said was a little on the sweet side.

22. Hmmm....One thing I find to be important is

the tomatoes used. I actually only use one kind, canned San Marzano/DOP certified plum tomatoes, from Italy. There are a few different brands. These are allegedly the BEST tomatoes for sauce. When do you add the meat? I use Italian sausages (hot and sweet) and bone-in pork chops. I brown them first and add to the sauce at the beginning. I find the bone-in chops give the sauce a real depth of flavor.

Also, I deglaze the browning pan with Cabernet Sauvignon, add teh deglazed liquid and solids to the sauce, and I add a lil bit of the wine to the sauce as it's cooking as well. That might help with the sweetness issue.

and add the meat at the beginning :shrug: I also like the link sausage (seems to have a stronger flavor than the ground sausage). If I bought a bottle of Cab Sauv it would never make it to the pan for cooking (and dinner would never get made :beer:)! Thank you thank you thank you for your expertise!!

And besides, you/the discussion raised a good set of questions about what role the state and public health concerns should play at times when consumers have (at best) incomplete information.

That said, any post in GD should be preceded by donning a flame-proof outfit or three.
