preheat oven to 350
greased 9" cake pan (round)
4 cups sifted flour
1/2 cup sugar
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
1 1/2 cups of buttermilk
2 eggs
4oz. (1 stick) of softened butter
1/2 pound of raisins
1 tsp or more of caraway seeds
some flour on the side for dusting and molding
mix dry ingredients in a small bowl
toss with hands
add softened butter to mixture and knead into dry stuff still using your hands. It will resemble a course meal.
Add raisins and caraway seeds still using hands
beat eggs in separate bowl
and add the buttermilk
add a little at a time to dry ingredients using a spoon
The dough should be heavy but not to wet
add a little more buttermilk if its to dry
dust hands with flour and form the dough into a round.
press into the cake tin but not to tight on the edges
dust the top with flour and cut a deep cross in the dough using a knife or fork...
bake for 1 hour
