1. that's pretty much what I do - for me, it ends up being more like
5 times a week veg, then every so often a turkey burger or something.

Then, when you do eat meat, you can try to buy turkey or beef or whatever you like that has been raised and killed humanely, and fish that has been harvested in a sustainable manner. It's all part of environmental protection, and general human kindness. Our local "Earth Fare" only sells locally grown meat, from animals that have been raised in 'natural' settings (not caged and stuffed with feed/drugs to make them grow faster) and then 'harvested' NOT in the horrible, huge, terrifyingly awful slaughterhouses. Actually, in NYC you can probably very easily find kosher butchers - requirements for kosher meat are pretty strict.

Also, for the veg. meals, try to eat what is in season and has been produced relatively locally - say, within a 200 mile radius of NYC; that way you're probably helping local farmers, and not adding to the consumption of fuel for foods that have been trucked in from across the country, or up from South America, or wherever the big grocery chains source their food from.

If you are interested in reading a good book about it all, try "Animal, Vegetable, Miracle" by Barbara Kingsolver. She's mostly involved in the 'locavore' movement (eating locally grown, seasonal-only foods) but she is a fantastic writer and there is a quite a bit of good information in there about the US's food industry. Without being preachy.

5. This link will help point you to some local sources.
Check out the CSAs --- if they deliver or drop off at a place convenient for you, it will be a built-in incentive to eat a varied diet of in-season produce. I belonged to a CSA in Boston and loved it.

6. yeah, I don't think I cooked a single meal when I lived in NYC...
though I'd wander thru the Union Square Farmer's Market every chance I could. Usually ended up buying decorative stuff, though, not food!
