Founder of POPEYE'S CHICKEN died over the weekend
64 year old Al Copeland whose Christmas light displays at his home in New Orleans put the Grizwold's to shame died yesterday in Munich Germany of cancer.

Copeland started his Fried Chicken Empire in New Orleans in 1972 and I can personally attest it is pure finger licking good. Another colorful character of the crescent city is gone.

3. Popeye's red beans were awesome for a commercial product!
though lacking in the amount of meats i cook into my red beans and rice- the flavor is all there and a good quick substitute or starter.

5. Popeye's Red Beans and Rice
is a Monday tradition in and around the city. My wife prefers theirs to hers, I say its a tossup at best. Lordy and we have one just about four miles up the highway.

In a large stock pot brown 1 half pound smoked bacon chopped.

when it's good and cooked add

two large onions chopped
2-3 bell peppers chopped
4 sticks celery chopped

saute over med heat until opaque... then add

a whole smoked ham hock or about a half pound of smoked ham chopped
(sometimes i add spiral sliced honey-baked ham and it adds
some deep sweet that works well with the hot)
a couple big sticks of cajun andouille sausage chopped into big chunks

bring these up to heat then add

2 lg bay leaves
1 T dried basil crushed
1 T dried thyme crushed
1 teaspoon marjoram crushed
1 teaspoon Coleman's dry mustard
2 T Whatsdishere sauce
1/4 Cup red wine vinegar (balsamic works good too)
1 teaspoon each (3 total) of black, white and red pepper.*
bring these up to heat then add

1 Quart chicken stock and 3 (of 6) 15 oz canned dark red kidney beans, not drained (bean juice will thicken).

bring these up to heat and simmer 20 minutes or so... then mash up the beans
and the sauce will thicken some.

*Check for taste- add Tabasco or Crystal Hot Sauce IF necessary. You might want to leave the hot sauce on the table as a condiment for those that don't dig it too hot. You may even want to go lighter on the 3 types of ground pepper, too.

when stew is simmered nicely remove and chop up the ham hock, put back in pot, add remaining canned beans, drained. If it gets too thick add more chicken stock.

bring up to heat and ladle all those good juicy beans over a heaping spoonful of white rice, and tell your momma to duck!

KFC's biscuits never came close. And the chicken is good, especially in the Louisiana stores where they lay the spices on. The ones we have here in Oklahoma don't make the hot-n-spicy near as spicy as they do down south. I like it hot:evilgrin:

and remember then-wife Patty's Rolls-Royce frequently illegally parked at Lakeside Mall. (in the fire zone by DH Holmes on the Causeway side)

he got his quota of partying under his belt plus a whole lot more. If ya get the opportunity Joey get ya some. Get that grease all over your fingers and face. You might want to try mild, don't know if you Yankees can handle the spicy.
