What are you doing with your leftover Easter Ham?
I make a ham every year on Easter, more out of tradition than religion, and I know there are some that don't eat meat, but for the rest of us...what are your favorite leftover ham recipes?

I'm thinking scalloped ham and potatoes, but am not sure.

3. have a pot of ham and beans on the stove right now
navy beans boiled with the ham and ham bone, some onion, maybe some carrot, season to taste. MMMM good eats but it will be windy in my house tonight.

4. I'm making a ham/mac casserole thing. Onions, sharp cheddar cheese, mac, ham, cream of mushroom soup
I might get crazy and make some soup out of the rest.

5. Oooh...that sounds good.
I had a nine pound ham for three people (I'm crazy) so I have LOTS of leftovers.

I already made some spilt pea soup the other week (frozen) so I think casseroles and sandwiches are gonna be it.

6. I bought a big ham today on the after Easter sale
I'm baking it tomorrow then stripping the bone and freezing it in small packets. I pull it out for lunches, red beans and rice, breakfasts, scalloped taters and just as a meal. I get a lot of mileage out of a big ham with the two of us.

I just used the last of the Christmas ham last week and we're ready for more :bounce:

I've never heard of that before - certainly over here the traditional meal for Easter day is roast lamb (following on from the whole Passover thing).

I don't have any leftovers as I was staying with a friend.

25. What leftovers?
My family eats food like a pack of wild starving dogs, late-comers are lucky to get anything at all. 15 people descend on a huge ham and 30 minutes later a grease smear on the platter and maybe a bit of gristle are all that's left.

My favorite "leftover" (a bought bone from the butcher and a hamsteak) ham recipe though, is 5 bean soup with ham, num-num-num.
