Yummy Vegan Cake - if I can make it! You can make it too

Ingredients:

1-1/2 cups flour
3/4 cup sugar
2 tsp baking powder
1/4 tsp salt
3/4 cup soy milk
2 tsp vanilla
Egg replacer equivalent to 1 egg, beaten

Preparation:

Preheat oven to 350°F (175°C). Grease a cake pan. In large bowl, mix together flour, sugar, baking powder, and salt. Combine remaining ingredients, and add to flour mixture. Beat for 2 minutes. Bake for 30 minutes in cake pan, or until a toothpick inserted in center of cake comes out dry.

Since nowhere in the state of Delaware do we sell vegan replacement eggs I used this instead:

Another egg replacement is 2 tbsp water mixed with 1 tbsp of oil and 2 tspn of baking powder. Mix together well before adding.
