She's jonsin' for peanut brittle too.

And she is diabetic!

I have never cared for sweets. I am dying for a Subway sandwich. My mother swears that I was switched at birth.

9. microwave peanut brittle recipe.. quick and easy
Microwave Peanut Brittle
1 cup white sugar
½ cup light corn syrup
1 cup salted peanuts- they don't need to be whole nuts..pieces are fine... or use mixed nuts
and make your recipe nut brittle... just as yum-o
1 tsp. butter
1 tsp. vanilla extract
1 tsp. baking soda

Butter a cookie sheet and set aside. Combine sugar and corn syrup in 2 quart glass bowl, microwave on high 4 minutes. Stir in peanuts, and microwave on high 3 ½ minutes more, then stir in butter, and vanilla. Microwave on high for 1 ½ more minutes..(hint: be careful removing bowl for additions.. very hot…)

Stir in baking soda until foamy. Pour mixture on buttered cookie sheet, spread thin with spatula. Cool completely, break into pieces on counter; keep in airtight container, if there's any left to save!
