huevos rancheros and benedicted.


Unfortunately, I can't eat them in any of those incarnations because I'm allergic to them. :cry:

24. Same here.
I still indulge from time to time, but oh, I pay for it when I do. I know never to go over 1 egg in any dish I eat. Else, I will pay for days on end. One egg, though, and I only pay for 1 day. I miss fried eggs, bacon, and Duke's on toasted bread sandwiches. God, those were scrumptious.

I find over easy a bit...gross.

However. I can't really eat eggs, as I'm on a low-protein diet, so it doesn't come up much.

fresh grated potato and garlic hash browns...
covered with sauted mushrooms, streamed broccoli, fresh tomato...
with an over easy egg slapped on top!

I don't eat them otherwise. And I can sufficiently replace them even in cookies and such with boiled flax seeds (1 Tbls seeds to 3 Tbls water.) :9

21. My favorite - fried egg sandwich
I cook mine very slowly over low heat, break the yolk, add salt and pepper, then flip it and turn the heat off. What you get is an egg that is mostly cooked, but the yolk is just underdone and creamy instead of runny. Then I add some cheese and a couple of dashes of Frank's Red Hot or Tabasco and put it on toast. YUM!

Over Easy requires toast. Soft-scrambled requires a huge pile of chopped green onions, thrown on top after they're on the plate.

26. only in cooking
there was a period for about 2 years growing up where I had eggs for dinner almost every single night. Now I cringe at the thought of them.

However I'm not going to not eat a piece of cake because the recipe called for 2 eggs.

Huevos rancheros are to die for, and sunny-side up with hash browns (lots of onions and peppers) are good for any meal.

If I'm feeling melancholy, soft-boiled with "soldiers" remind of childhood. I don't think anyone serves them that way any more.

46. Over easy. But I have the SECRET to perfect scrambled eggs:
First, don't do the "add milk" or "add water" thing that some recommend.

The key is temperature and a skillet just gets too frickin' hot. So, get a double boiler going, and when its boiling, add 2 tbs butter. Then add 6-12 eggs depending on how many you are feeding. Cover for a few minutes, then check and stir gently. They will cook slowly, but never over 212. They will be done, but not hard.
