67. Thank you! It turned out really well. I was a little leery of Hubby's
reaction to the tofu; he's generally a 'dead flesh' kinda guy, but he loved it!
And the wontons were perfect. Waiting for the dough to rise now for the sesame buns; we're going to make the hats while that's happening :-)

trying to eat more vegetarian for health, but filets, mushrooms and potatoes for tonight. Rare for me, medium for the Significant Other (it used to be Well Done, but in 16 years, I've taught him to appreciate the taste of un-charred meat).

I got the basics off the lady at the deli. She showed me the basics but hers called for canned corn beef. I just tweaked the idea a bit.

I have yet to even look up a recipe. I've been having internet woes.

72. if you're cooking a corned beef...
...that you got from the meat department in a plastic bag, plan on about four hours of cooking time. It's very simple, though. Here's what I do:

Cover the hunk of beef with water in a kettle. Add a couple of carrots, a chunked bell pepper, an onion cut in quarters, some black pepper or peppercorns, a big handful of parsley, a stalk of celery and a clove or two of garlic. Also use the seasoning packet that comes inside the plastic wrapper.

Bring to a boil, then lower to a simmer. Cook for four hours or so. Let the meat rest out of the liquid for fifteen minutes before carving.

so I gave myself a break and heated up two Trader Joe's frozen pizzas. To liven things up, we broke out a bottle of Trader Joe's sparkling cranberry juice. Wheeeeeee!


Earlier I made four kringels -- a sweet yeast bread with bits of candied fruit, shaped like a very large pretzel. An old Estonian tradition. One for each of my sisters-in-law, one for my father-in-law, and one for us.

Estonian is extremely hard to learn if you don't learn it as a baby, like I did. Even though I was born in the U.S., I didn't learn English until I went to kindergarten, because my multi-lingual parents wanted me to be proficient in Estonian first.

I went a few years ago to visit my aunt, cousins and other relatives. Even though a few of them speak English, I managed to get by for 10 days speaking Estonian almost exclusively. My vocabulary is not as big as I'd like, but there's not much opportunity to use it here.

It's beautiful and mostly unspoiled. It's surprisingly flat, with very few hills except in the southeastern corner of the country. The capital, Tallinn, contains a walled medieval town with guild halls and cobblestone streets. I also visited the big university town of Tartu, where both my parents were law students before the war put an end to their studies. My cousins took me to my father's home town of Valga, on the Latvian border, to visit some second cousins in Viljandi, and to the seaside resort of Pa"rnu. Then we toured the big island of Saaremaa and visited Kuressaare Castle and the old windmills of Angla.

The coolest thing was seeing nesting storks on utility poles on the way back to Tallinn from Tartu. Their nests are as big as SUV tires, and each one had a parent stork standing watch on one leg, while the nestlings poked their funny beaked faces over the sides.

57. Tomorrow I will buy a family-sized serving of Chinese Hot and Sour Soup.
It is a miracle cure for sinuses. Of course it s only temporary, but to be able to breathe for an hour is heavenly.

I have never heard of tater tot hot dish. It sounds intriguing. :)

It's Minnesota comfort food.

1 lb. ground beef
1 package frozen tater tots
1 package frozen onion rings
2 cans condensed cream of mushroom soup

Brown ground beef. Remove from heat; mix in one can of soup and frozen tater tots. Spread in 13x9 baking pan. Arrange onion rings on top. Spoon other can of soup over it all. Bake at 350 until it's bubbly.

Hey, I never said it was good! Nor did I say I was eating it!

65. Nothing is ever ruined by adding cheese.
However, I have to say, if the soup is spread over it all properly, it achieves a processed-cheese-food-like smoothness after the baking. The first time my MIL made it, I thought it was covered with cheese. But no, it was the cream of mushroom soup.

I ate a late lunch. Made some mac & cheese for the kidlets. I ate some veggie bird's nest appetizer thingies awhile ago. I'm trying not to eat too much.

Just call us carb nuts. My husband has the flu, so we are taking it easy and kicking it at home. Watching a concert movie. I plan to be in bed long before midnight.

Pizza rolls, spinach/cheese hor'dorves thing, mozzerella sticks, buffalo wings (for me, Haruka doesn't eat meat).
