What's your favorite oil for deep-frying food?
I just bought a small deep-fryer, and I'm thinking peanut oil. But I've never done deep-frying, so really don't know pros or cons about the other oils.

What's your preference, and why?

2. Just make sure it has a high smoke point

Peanut oil is fairly high, and I seem to remember it being recommended for deep fryers in one of Alton Brown's books. Personally, I just use a wok with some regular olive oil, but that's different.

11. Vegetable oil
If I am only going to use a little bit of oil, like when I fry fish, I'll spring for a small bottle of EVOO.
