Uses for leftover corn tortillas?
I have a bunch from making enchiladas last night. Other than enchiladas, what can I do with them?

Some eggs, some cheese, a little enchilada sauce. Pure heaven. Tofu or chicken if you want a little extra body.

Your answer has been the official answer as long as corn tortillas have been leftover.

(But then I suppose not everyone is of Mexican descent or has lived in the Southwest and learned from those with ethnic expertise on the matter)

5. Break into bite size pieces, mix with scrambled eggs add some
green onion, green chilies and some cheddar cheese. This is one of our all time favorite breakfast/brunch items. We also like to add a little salsa after they are cooked.

I'm celiac, so bread is a memory. Soft corn tortilla wraps (filled with cheesesteak, spinach, egg salad, pretty much anything) are what I live on, at least at lunchtime. Outstanding, wonderful, versatile. If they're hard tortillas (which would make for some unusual enchiladas, but still), go with GOPisEvil's suggestion.
