What local/ethnic staple have you not mastered?

For me it's flour tortillas.

I am still unable to make a dozen burritos for the freezer without several ruptures.

1. for all the Mexican food I cook, I have never even tried them.
what are your instructions? Are you trying to make your burritos with the tortillas too fresh? I have had them fresh cooked and they would never work for rolling anything up - I think they need to sit in a plastic bag for a few hours or over night.

D'OH! I thought you meant MAKING the flour tortillas. Oh yeah I suck at rolling store-bought ones too. But you do need to heat them a little - either on a comal, over a gas flame, on a towel in the microwave, or foil-wrapped in the oven. Not too much, just enough to get the lard/shortening to soften and the tortilla good and flexible.

I have never frozen them either - seems like they are so fast to throw together fresh, freezing would turn them into mushy circle K burritos. I freeze corn tortillas, but have never tried flour.

15. 10 seconds on a hot griddle or pan. It took me YEARS to figure it out, plus
my friend's homemade tortilla making Mama.

One of my food specialties is wrapped food from different cultures and the one constant is that there's a lot less filling required than one might think.

Me, I can't make good burgers.

They are local and ethnic staples to me anyway.

Besides I can't stand grits and biscuits, well back home biscuits are what y'all call cookies.

Ironically though the pancakes are easier because they use a thicker batter here than back home in the UK plus the British Batter has to sit out for a time for best results.

12. I've never tried to make sourdough bread.
Bread bread I used to make for us once a week. Good sourdough would be fun though and would make the house smell nice.

13. you need to steam them first, or heat them in microwave
I used to cook on the weekends at a local grill, and I had to roll dozens of them every morning. If I didnt have them hot enough they would split every time.
