Hot sauce update.
Dave's Cool Cayenne Pepper sauce is really weak. Not even medium, as they claim. It's their version of Frank's. First tastes are vinegar and salt. Heat is barely noticeable.

That's way too weak for me and their Insanity Sauce is way too hot. What's a guy to do?

1. There was a thread about this two days ago....I forgot to mention one
believe it or not, Goya ( yeah....Goya ) makes a pretty decent hot sauce, and I regularly buy their Salsita....here's a picture of it, and I highly recommend this stuff....very, VERY flavorful which is what I like about it the most




if you see this stuff...pick some up and try it...let me know what you think! It's pretty thick, too

8. Looks good, thanks. I use their olive oil. Consumer Reports gave it an A+.
Extra virgin. Great Spanish oil.

7. I recently started using Frank's RedHot on just about everything, and I thought it was pretty spicy
Then I looked at a comparative chart of various hot sauces and peppers and where they fall on the Scoville heat scale, and Frank's original is right there near the bottom. Compared to the rest of the things on the list, it serves as a bland, timid entry, perhaps suitable for patients recovering from surgery.

I'm such a spice wuss. :cry:

15. Melinda's - everything from mild (trans: hot) to XXXX Habenero Special Reserve
All varieties have excellent flavor.

Dave's Insanity Sauce is hot, but it doesn't have much flavor. It is sort of like having a really loud stereo system with crappy sound.

19. Cholula hot sauce isn't super hot but it has a great flavor.
It's made mostly with pequin peppers and some chile de Arbol.


I second the recommend on the Melinda's line. Very flavorful.

It's hot as hell when you follow the instructions a dilute it with three parts water, one part vinegar and one part sauce. Straight from the bottle should produce all the heat you desire and then some.

26. that is the fundamental divide that separates hot sauce lovers....
Vinegary or not. Melinda's, Tapatio, and so on are examples of chili infusions without a vinegar backbone, while Tabasco style sauces are basically vinegar, salt, and chilis, fermented or otherwise. Frankly, I prefer the vinegar based sauces for most dishes, and when I don't want vinegar I prefer something along the lines of sambal olek or toung ot toi, just chilis ground with garlic and minimal liquid.

My favorite hot sauce is the ubiquitous south east asian table sauce of finely chopped Thai bird's eye chilis with distilled white vinegar and nouc mam (fish sauce). I ALWAYS have a bowl of this lovely stuff in the 'fridge-- I make a fresh batch about once a week.

36. As it turns out, the medium has less flavor than I'd have thought. There isn't much to it.
I put a couple of tablespoons in a jar of chipotle salsa and tasted only a tad of vinegar and salt as a result. :<

That's the reason why I stick to known entities with hot sauces; you never know what you're going to get.

I've had what some sauce makers call 'hot', and it barely made a blip in the heat department.

The hot is like loud music on a crappy stereo, as someone pointed out above, and the mild doesn't have much going for it after all. Oh, well. We learn as we go. :hi:

39. Probably not hot enough for your tastes, but
I really like that "Dat'il Do It" sauce made with the Datil pepper.

Have you tried "Inner Beauty"? That's a habanero sauce that's not too off the charts with the heat.
