1. Here we are calling it St. Patricia's Day, because
both my Mom and sister are named Patricia. Tonight I baked "Irish Kisses" (mint meringue cookies with tiny chocolate chips in them). They sort of disintegrate and vanish when you put them in your mouth.

3. I can't stop eating them. Very easy to make too.
The weird thing is you preheat the oven, then put them in the oven and turn it off immediately, but then you have to wait hours until they are totally cold before you can eat them. But it's worth the wait. This is the recipe I used:

CHOCOLATE CHIP AND MINT MERINGUE COOKIES

3 egg whites
1/2 tsp. cream of tartar
Pinch of salt
3/4 c. sugar
4 drops green food coloring
4 drops mint extract
1 (6 oz.) pkg. miniature chocolate chips

Preheat oven to 375 degrees. Grease and lightly flour 2 cookie sheets. Beat egg whites with cream of tartar and salt until foamy. Gradually add sugar, 2 teaspoons at a time and beat until soft peaks form. Stir in food coloring and mint extract. Gently fold in chocolate chips. Drop by teaspoonfuls 1 inch apart onto prepared pans. Place in preheated oven then turn off oven and let stand in oven with door closed 8 to 12 hours.

4. I've been eating Irish soda bread.
I love it, but it's only available at the grocery store around St. Patrick's Day. Gotta find a recipe.

But I did enjoy Scotland. It was an interesting place to visit. Maybe Someday we will travel that way again, but right now, my focus is heading in the other direction.. and you can probably guess where.

Oh and enjoy your holiday.
