buttermilk biscuits are best when made with lard
i always have believed that because for some reason
the lard works less into the flour and it creates a flakey biscuit
i know that lard is really unhealthy but if i use it only in my biscuits i can rationalize it to myself

oh...... sorry
what with every single chance to "win" being exhausted for hillary, i figured this would have been reverted to GD-Biscuits by now

ill check back again in a week or so

i sure do miss GD-Biscuits though
we were all in the middle of the "lard -good or bad in re buttermilk biscuits controversy" when they converted it to GD-P
ok well

Lard makes tortillas better too.

But frozen butter mixed with the flour to make scones is the hot ticket! Flaky as the flakiest Obama or Clinton supporter here, I gar-on-tee!

64. Oh, yeah, butter is great for biscuits
I do butter all the time. You can also substitute plain yogurt for the buttermilk. A variation I make when I have it on hand is a sourdough biscuit:

2 cups flour

1/2 cup frozen butter, grated on the coarse side of the grater

3 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1 cup, more or less, thin sourdough starter

Work the butter into the dry ingredients with your hands, add the starter, stir until barely mixed. Pat out, cut into rounds, bake in a 400-degree oven until done.

This recipe makes nice yeasty biscuits. Very good stuff.

my grandmother's fried pies were never quite as good after she quit using lard.

I will say one of my aunts made some seriously flaky biscuits with regular shortening though oh man were they good.

Yes that IS my table, hubby just had to take a pic. I do it every year and his long distance family he has never believes him.



You can see it there...above the brownies and rum almond stuffed crescent bread- Next to the Banana bread and kiddy corner to the lemonaide cupcakes.

Theres a pumpkin pie in there, and uhm...I think the ambrosia salad was hiding.

was the name of an Oregon Farm Cooking cookbook that my maternal grandmother and several other Oregon farm cooks memeographed up in the 60's. They said that if you worked that hard, you could eat that way.

65. Baking should be preceded by wall cleaning.
Washing walls is an easy task to accomplish but a time consuming one. You will need a large bucket with hot water, a cleaner with a degreaser in it (Mr. Clean, Pine-Sol), a mop with a sponge head, and lots of towels.

Pick a starting spot that you will recognize as such, like a corner. Soak the mop in the water and cleaner, squeezing out any excess and then simply mop the walls. Follow with a dry towel to wipe dry.


Get your priorities in order!

Lard is no unhealthier than butter and is certainly better for you than the hydrogenated oils in vegetable shortening.

If you're still worried about lard, cocnut oil is a good substitute for shortening and lard (which is actually funny because corn oil shortening was developed as a substitute for coconut oils...).

Then I thought about that a second ... and remembered that I *do* cook my sausage in bacon fat.

Fortunately, I take enough blood thinner {cough, alcohol, cough) that I keep checking out really good. Big belly. But healthy blood tests.
