In Mac OS X, how do I make firefox and thunderbird default apps?

I got addicted to these two apps so I'd like to make them defaults. I know how to do it in windows, but I'm new to macs.

Thanks for the help.

1. System Preferences
Open up System Preferences, go to the "Internet" icon (under Internet & Network). Once you get that window open, go to the "Web" tab and set the default browser, and then the "Email" tab to set the default email program.

2. Unfortunately, I have no 'Internet' icon under 'Internet & Network'

Only a 'Network' icon. Something I haven't enabled?

And on top of that, fooling around in System Preferences I somehow lost my airport connection. Had to go back to the Ethernet cord.

Oh well, tomorrow's another day. Another opportunity to screw something up.

Launch the Safari web browser, open the Preferences (the Safari Preferences), make sure you're on the "General" tab, choose your default web browser in the "Default Web Browser" pop-up button. That should do the trick if you're running Mac OS X 10.3 "Panther".

I installed the RC Default App custom preference pane, it allows you to chose defaults for just about everything in one convenient place in the System Preferences. Check it out:

4. I guess I should have asked which version of OS X you were using
I was describing OS 10.2.8. In Panther (OS 10.3.X) you need to open the Safari application (for the browser) and the Mail application (for the email), then open Preferences and set the defaults there.
