We had a 10 minute dinner tonight......Yummy!
I always ask my husband how hungry he is..That determines what I will make and when:)

Tonight was a 6, so we had

bacon
grits
runny eggs
fresh coffee

I have a million 10-minute meals :)

can you tell I get lazy?:)

Mr K says he doesn't like grits but he told me that about redbeansandrice too until he tried mine.............

2. Grits!
I grew up in New England, but my Dad was from Florida (and HIS Dad was from North Carolina) so we had grits all the time -- not very common in Connecticut!

The best thing was when he purposely made enough for leftovers, chilled it in a loaf pan, and the next morning for breakfast he'd slice it, fry it in butter until the edges got crispy, and we ate it with honey. Haven't had that in years!!

3. My grandfather called it Cornmeal mush, and he fried it in bacon grease
:)

Italians call it polenta :)

we all eat the same stuff. we just call it by different names :)

5. What's the difference between yellow and white, though?
I remember cornmeal mush and my one (lame) attempt at polenta as being yellow cornmeal; his grits were always white. Is there a difference?

That reminds me -- he also made spoonbread! Something else I haven't had in ages and should make sometime. (I think that has yellow cornmeal in it, but you foodies would know better than me!)

6. cornmeal is yellow and from the kernel, grits are the tiny bit that sticks
into the "ear" at the bottom of the kernel

a real corn lover eats his ear all the way to the grit, the dilettante just nibbles the kernel

make sense?

10. hard to hide much from H2S in C&B yanno
he keeps a pretty close eye on us down here

and hell, I could be all wrong (but that's what I was told)

15. I love grits....
Personally, I find most yellow grits more flavorful, but that's not always guaranteed. Maybe it's just my imagination, but side-by-side I tend to prefer yellow grits. On the other hand, that's what I mostly ate as a child.

18. funny this topic should come up....
I was just reading The Way to Cook tonight. According to Julia, grits comes from dried hominy, which is corn that's been processed to remove the seed-germ and outer skin. Polenta is cornmeal.

I felt informed, and had to share.

23. I'm like that too.
I don't like grits. Maybe I've never had good grits, but I don't like them. But I like hominy in green chile and posole, and these are the only ways I've ever tried it.

16. Okay, question for SoCalDem and mikec...
Were you raised in the south, or were your parents? Or do the same influences occur in California?

I always thought grits (along with blackeyed peas and biscuits and the other things) were strictly "southern," but what do I know? :dunce:

12. Hot cereals -- Anybody here remember "Maypo?"
Maypo was a popular hot cereal when I was a kid -- I can't find it now, don't even know if they make it anymore. Now it's all instant packets in 600 varieties.

Minus the grits. Neither of us liked hot cereal.

We called it Larry Schwartz, after the doctor who told us we had to cut back on cholesterol.
