"Dear lord this kid needs to eat some vegetables" Sloppy Joe Recipe
Brown and drain one pound of ground beef and/or turkey. (I bet you could use a meat analog here, too.)

In a splash of canola oil, sautee until translucent:
1 medium onion, chopped very small
1 medium green pepper, chopped very small

Then add:
1 cup shredded carrot, zucchini and/or daikon (AKA what I had in the house)

Add the turkey and mix well.

Add:
3/4 c water
1/2 c ketchup
2 tbsp yellow mustard

A good splash each apple cider vinegar, soy sauce and worchestershire (sp?) sauce

Mix well, simmer 10-15 minutes.

Make a slurry of 2 tbsp cornstarch and 2 tbsp cold water. Add to mixture and simmer until thickened.

Serve on buns (wheat if you want 'em), with pickles, and alongside carrot coins and tater tots. Fruited jello for dessert. (What can I say? I'm in a school cafeteria mood.)
