I really like brown rice
but haven't bought any in a long time until a couple days ago

so I'm cooking some tonight and got distracted after putting on and when I checked back 30 minutes later the heat was too low and it wasn't simmering (thank heavens for glass pot lids)

so I crank it up and cook it some more (like 40 minutes more)

:scared: it's probably ruined huh?

1. I don't think so!
Some kinds of rice say you should soak it 20 minutes ahead. So just pretend to yourself that you soaked it, that's all.

I'd imagine it might have less chewiness, but some people dislike its chewiness anyway. So maybe this new "method" is a good transition for Mr. Ketchup... See, it's all in the rationalization...

(I learned this from my mother, who was an expert at rationalizing everything! Whatever happened, she came up with a reason it was really better that way.) :hi:

3. Thanks!! Gonna order some right now!!
Instant trip back to childhood -- Maypo with brown sugar!! Thanks, AZ!!

Of course, it'll take me years to finish two boxes, so I hope I can keep all the weevils, moths, and other critters mentioned elsewhere from contaminating it...

7. OmiGAWD I just spent about $100 in that store!!
(Shhh -- don't tell H2S!)

And THAT was after deleting half of what I put in the shopping cart!!

That store has all sorts of things I didn't think were even made anymore! Things that I -- er, that a much older person -- would remember! Plus stuff that may have been available in New England and not everywhere (I remember asking people, "Why can't I find Boroleum ointment anywhere?" and they'd go, "Huh?")

So we're getting the Maypo, the Boroleum, the Sweetheart soaps, the Lavoris mouthwash; and how could we resist the little retro Christmas tree ornaments on sale for $9.99, let alone the "Tired Old Ass Soak?" And the finishing touch: Horlicks malted milk tablets. My mother bought these in big jars when we were kids. They were the only candy we had, and I think we all got sick of them. But my three sisters and I are planning a reunion this summer, renting our old house in Connecticut even (how cool is that) and I just HAVE to bring them each a box of Horlicks malted milk tablets!!!

Anyway, I'm not sure whether to blame you as our "Devilish Dealer of Decadence" ("Rocky" still lives here) or thank you for linking me to this great store!! I'll have to let you know when I find out whether these things are as good (or bad) as I remember!! :D

So uh, what are you going to have in your store?

Are you stocking chocolate, too? Like those 75% and 80% cocoa dark dark chocolate bars I'm addicted to?

Any of that dark roast coffee H2S liked so much?

NOT that we want to KNOW!!!!

11. Well thank goodness....
Because superdark chocolate is a great accompaniment to espresso, and an irresistable impulse buy on the way out, so I'd hate to see you considering going down this road to evil...

So don't even consider dealing in hard stuff, like....

And the ONLY kind I can get at my supermarket:

13. Nope
Only the Droste 75%, pictured last... (Worth every penny at $2.99 a bar!) I am addicted to chunking off a piece of it every night after supper, while H2S has his espresso.

I've ordered others online -- I think from chocosphere.com, where I got most of the photos.

It's supposed to be good for you, too, in case you need any rationalization... ;)

15. Cripes, I should have canceled my plane ticket
and stayed long enough to do the Ebay thing. My parents had a closet stuffed full of ancient nostrums and patent medicines, looks like they were suckers for everything and never read the ingredient labels on any of the stuff that sprted them. I'm sure that stuff would have sold like hotcakes to oldsters who remembered it.

My mother's cureall, though, was blackberry brandy. My dad's was Epsom salts.

14. The only way to ruin it is to burn it
and I don't mean scorch the stuff on the bottom of the pan (that's pretty good, actually), I mean turn it to charcoal and need a hammer and chisel to clean the pot.

Brown rice takes much longer atop the stove, although I've found that my $14 rice cooker does a great job if I just let it rest and steam for about 10 minutes. It's edible as soon as the cooker clicks off, it's just very chewy. The resting period softens it up a bit.

Brown rice has flavor as well as texture going for it, and it's not suitable for more delicate, herb scented sauces or the subtly seasoned Cantonese or Shanghai fare. Beans and brown rice, however, are a match made in heaven, and brown rice stands up to Szechuan and Hunan cooking styles extremely well.

I use both brown and polished rice, but as time goes by, I find I use the brown rice more. There's no way to get it to work in risotto, though.

23. I posted this in a different thread just a while ago...
Edited on Mon Feb-06-06 07:54 PM by Wordie
but it was in a thread/post about lentils, and some may not have seen it, so here it goes again: I've read recently that the trick to making brown rice come out less tough and chewy is to not add the salt during cooking. I must add that the one time I tried this approach, it was still on the chewy side, but that could have been that I didn't really give it enough time. (The jury is still out on the trick as applied to lentils, too. The one time I tried it I didn't add salt, but only too late discovered that the can of tomatoes I used in the dish had a lot of salt in it. So, the lentils were a bit too tough for my liking. Oh well, I'll remember to check next time.)

I too, love brown rice, although I really love white rice too. There is something just very satisfying about rice.

17. I almost always make brown rice instead of white.
It is better nutritionally. I only make white rice when I am pressed for time.

21. My sister in law gave me one of those rice cookers
and I find that brown rice comes out great in it.
I really like it.

I only eat the short grain brown rice.
I don't think the rice takes as long in this
cooker as when I try it on top of the stove.
I might be wrong.
