I'm on a cooking binge, trying things I've never made before.
A few days ago, I made my first chile rellenos, but baked them instead of frying.
Roasted some chiles (poblanos, anaheims and jalapenos) over the stove burner to blacken the skins, then into a bowl covered with plastic to steam them. After they cooled, removed the skins and seeds. Put a piece of monterey jack cheese into each one.
Beat some egg whites, then folded in the beaten yolks.
Layed the chiles out on a baking sheet and covered each with the egg mixture.
Baked until the eggs were golden.
Served on a bed of refried beans with fresh tortilla chips and a crema/salsa mixture.
Yum! Oh, next time I'd stick with the anaheims, they were the best -- the jalapenos were a bit too hot and the poblanos fell apart too easily (probably because of larger surface area, had to heat them up longer to get the skin blackened and so the pepper cooked more and then broke up)
