Hello all!! I'm back after surviving the equivalent of Captain Tripps..

I have been sick as three dogs since the 2nd of January and I am eternally grateful that I came through the other side. I digress...my wonderful husband bought me a meat grinder, with all the attachments and everything I needs to make sausages. Here's my dilemma...I have made many types of sausages but in gratitude to the love of my life, I would love to make his favourite which is mortadella. Problem??

I cannot find a recipe for that sausage to save my life, try though I may. I have made wine and cheese sausages, jtrenice, (don't ask... you couldn't get me to eat that if you were holding me over a pond of burning lava), hungarian kolbas, polish kielbasa, Chicken and apple,summer beef sausage, etc but I can't find ANYTHING that even begins to come close to giving me the foggiest idea how to make this sausage. I just want to make a simple mortadella with pistachios but it seems to some extremely and highly classified secret. I'd have an easier time finding the two dessicated brain cells that form bush's brain.


HELP!! I ain't too proud to beg...

here: http://www.coquinaria.nl/english/recipes/06.2histrecept.htm Well, actually two recipes. One that's supposed to be the original recipe with no measurements and, below it, a modern adaptation. I hope this is what you're looking for. Even coming from an Italian family, I've never even tasted mortadella. It never looked appealing.

3. I think I have a recipe At home for it.
I have Michael Ruhlman's book Charcuterie and I think there is a recipe in there. I will look it up and post again this evening.
