sounds wonderful!!

I got this morning and made this for our weekend snacking pleasure, so I'm thinking soup for dinner

AMAZING PECAN COFFEE CAKE

INGREDIENTS

* 2 cups all-purpose flour
* 1/4 teaspoon salt
* 1 tablespoon baking powder
* 1 cup butter, softened
* 1 cup sour cream
* 1 1/2 cups white sugar
* 2 eggs
* 1 tablespoon vanilla extract
*
* 1/2 cup brown sugar
* 1 cup chopped pecans
* 1 teaspoon ground cinnamon
* 2 tablespoons butter, melted


DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Line a 9x13 inch pan with aluminum foil, and lightly grease with vegetable oil or cooking spray. Sift together the flour, baking powder, and salt; set aside.
2. In a large bowl, cream the butter until light and fluffy. Gradually beat in sour cream, then beat in sugar. Beat in the eggs one at a time, then stir in the vanilla. By hand, fold in the flour mixture, mixing just until incorporated. Spread batter into prepared pan.
3. To make the Pecan Topping: In a medium bowl, mix together brown sugar, pecans and cinnamon. Stir in melted butter until crumbly. Sprinkle over cake batter in pan.
4. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack, and remove foil.

I'd give a lot for a plate of it right NOW.

Yesterday I made Martha Stewart's lemon mousse as well as Chez Panisse's Lindsay Cake (a nearly flourless chocolate fallen souffle cake) for a family birthday, and am resisting the leftovers. As a recently diagnosed type 2 diabetic, I only had a taste of each. And I do love that lemon mousse.

But I could eat pot roast!

I was going to fix something else Thursday night but I wasn't feeling well. We had our celebration and then we ate dinner! ;)

I liked this so much better than the lamb osso bucco and so did the DH. I followed the instructions to take the meat out and cover, then cook the sauce down to thicken it but I added tomato paste, too. I served it with angel hair and a green salad with a red wine vinegarette. Having chunks of veggies in my sauce still kinda weirds me out, but the tasted is so wonderful I didn't care as much.

It is incredibly delicious! This will definitely be put in the rotation! :9
