Awesome cookies!
I started with this recipe and changed it to 36 servings:

I swapped the brown and white sugar amounts, used half whole wheat pastry flour and half unbleached flour. I added 3/4 tsp. baking powder, 3/4 tsp. ground nutmeg, about 1 1/4 c. chopped dried apricots instead of raisins, and about a cup of almond slices.

Instead of baking in a cake pan to make bars, I rolled them a little bigger than a walnut and make cookies. They do spread a little so a little over an inch between cookies on the cookie sheet is a good idea. Baked for 10 mins. and let sit 2-3 mins. on the cookie sheet when I took them out.

They are delicious! I like the combo of the apricots and the nutmeg a lot.

and... since we're almost out of the 2nd batch of PNB cookies you suggested earlier I guess I'll just have to try these next :evilgrin:

I think the oats I have are regular though, not quick cook, will that matter?

4. Glad you're liking
those PNB cookies. It's nice to share recipes that others also have success with.

Maybe someone else can answer your oatmeal question because I'm not very sure. I imagine you could. I've subbed quick oats in recipes that call for rolled oats.

7. The only difference between regular oats & quick-cooking
is the size of the flakes. If you like big oat flakes in your cookies, the regular ones will be fine. Otherwise you could chop them up a little.

Hope they turn out great, they sure sound good!

I really wasn't sure. We buy steel cut for breakfasts and quick oats for the baking. Really haven't felt the need to have three kinds in the house! LOL

Re: the King Arthur classes... silly me! They are NEXT weekend, not this weekend! So I drove all the way up to the hotel and walked all around the whole place, finally found the ballrooms and a list of events scheduled only to find that KA wasn't on the list. Boy was my face red! At least I know how to get there next weekend!@@ :rofl: :rofl:

9. regular oats give much better texture, in my opinion
I never use the pre-cooked ones for anything.

11. Instant oatmeal is pre-cooked
but quick-cooking oats are not. They're regular oats that are cut smaller and thinner so that they cook faster. I wouldn't use instant oatmeal in baked goods, either, the they wouldn't hold up.

If I use dried cranberries or raisins, I soak them in some hot tap water while I'm getting the batter ready. These apricots, which I buy at Aldi's, were nice and plump and soft already.

15. I make a cookie very similar to this and substitute dried cranberries
for the raisins and add white chocolate chips (just a handful or so). Absolutely wonderful taste combination.

I saw them in a magazine before xmas and thought they looked incredible. I think my expectations were too high because I thought they were just okay. One drawback to pictures, I guess! LOL Everyone else ate and liked them, tho.

17. They were very similar to that. I know what you mean about the
pictures, though. I sometimes forget that they use professionals to take those shots and who knows how many cookies they go through before they find that perfect 10.

18. It might have been me.
I wanted them to be soft and creamy. They weren't. I think I over baked them by about a minute or two maybe. My oven tends to have hot spots. Not that they weren't good...it really was a texture thing. I may try them again and underbake them just slightly.
