Just finished this for dinner. Was excellent! I added half a shallot to the browned butter sauce since I had it left over from the rice that I served with it.

2. Not sure.
I'm not much of a catfish eater but now that you have Mr. K eating salmon, it would work wonderfully on that since salmon and rainbow trout are very similar.
