I've really been in the mood for dry cured bacon :D. So I went up to Wheat Ridge, a neighborhood just north of us to shop at Edwards Meats. They prepare almost all their own meats. They do all their own curing and smoking.
Anyhow, I found elk salami and it's good. Mild but with a nice aftertaste. It looks like they make it pretty lean and not very salty. It reminds me of regular salamis but with a milder flavor that we're enjoying. DH likes his with a dab of Gulden's mustard. I like mine "neat".
