simple and simply divine, just pasta tossed with a little truffle butter and parmesan
got home late, exhausted, grumpy, hungry, no leftovers, too tired to cook ... I was in a bad mood and needed some comfort food.

There were a couple of items i had bought from a gourmet Italian store a few month ago, but never got around to trying it: whole wheat pasta and truffle butter. I don't usually buy expensive gourmet stuff, so this was uncharted territory ....

So I cooked the paste al dente, added a very small amount of truffle butter, and tossed it with some really good grated parmesan from Whole Foods.

It was GOOD! Really good! Next time, I'll cut back a bit on the truffle butter -- it's really strong -- and add some good extra virgin olive oil.

Burro con Tartufi: the truffle butter I bought, and really liked it. And since it's so strong and can only be used in small amounts, it will last a long time if stored properly.

Very nice whole wheat pasta, probably the best I've had. It's expensive so I probably won't get it often, and besides, Barilla makes a decent whole wheat pasta.

.... is macaroni with olive oil into which is mashed a can of anchovies. It does NOT taste fishy and is quick and easy.

Open the can of anchovies and drain them of the oil in which they're packed (**that** oil tastes really, really vile and fishy and gives 'chovies their bad name) and mash them up with a fork. Put some olive oil in a pan and heat it. Add the 'chovies and heat them up. They'll pretty much dissolve in the olive oil.

Pour this over the cooked macaroni and top with grated parm.

"Momma! I Miss you!" good!

3. It sounds delicious, and sure as hell beats a bowl of cereal
for supper, which is what I have when I just can't face making anything more complex.

When I have more energy, I also like to cook some pasta and add a squeeze of pesto (out of a tube, which isn't bad and beats the dried stuff) and a few cherry tomatoes, and some parmesan cheese. In the summer, I'll add a fresh tomato and basil from the garden, maybe some cucumbers or zucchini. Quick, easy, and almost free...

4. Truffle butter is great.
We received both white and black truffle butter as Xmas presents. A little goes a long way! Try it as a thin layer in a grilled Gruyere or Swiss sandwich.
